Great food deserves great drink and now Hickory Lane offers both with a short but well rounded wine list that is available by the glass, carafe or bottle. The beer list always hovers around 15 selections from around the world with a focus on local craft beers. Spirits are the heart and soul of the bar at Hickory Lane. The spirits are selected for their wonderfully different qualities and their applications for making fun and soulful interpretations of classic pre-prohibition era cocktails like Martinis, Manhattans, Sazeracs and punches.
Executive Chef, Matt Zagorski was born in Norristown, Pennsylvania. After graduating from Owen J. Roberts High School, Matt pursued a degree in the culinary field and enrolled at Pennsylvania Culinary Institute in Pittsburgh, PA. After graduation in 1998 Matt began his culinary career at Neil Stein's Striped Bass in Philadelphia, where he quickly mastered all facets of kitchen operations and was promoted to saucier. After mastering his craft as a saucier, he was promoted to sous chef.
In 2003, Matt left Striped Bass for an opportunity at Lacroix in the Rittenhouse Hotel, where he trained with famed Chef Jean-Marie Lacroix. Matt eventually made the move away from Lacroix and went back to Neil Stein for the position of sous chef at Rouge, on Rittenhouse Square. While heightening the level of quality at Rouge Matt quickly earned the title Executive Chef. As Executive Chef at Rouge he won 7 "Best of Philly" Awards and was awarded "2006 Top Ten Chefs in Philadelphia" by Philadelphia Style Magazine.
Matt is looking forward to opening Hickory Lane and bringing a new style of dining to Fairmount.
